Gluten Free Oatmeal Protein Cookies

A nice simple recipe we found over at food.com that makes a versatile cookie which you can tweak with a few additions.

We added raisins, because what’s more traditional in an oatmeal cookie than raisins?

But you could easily add nuts, dried cranberries, dark chocolate chips, chia seeds or a mix.

While the directions suggested adding more brown sugar ‘if you like them sweet’ I found the basic recipe was just right, after they sit for a while they tend to become just a bit sticky.

Also the recipe said that it you would get 24 cookies. We made ours a bit bigger and only got nine and getting 24 cookies would make for really small cookies that would be more like cookie bites.

Despite the issue with the yield these are definitely worth making, with a nice chewy texture and taste.
