Gluten Free Dairy Free Banana Oat Pancakes

gluten-dairy-free-banana-oat-pancakesI first came across this receipt for Gluten Free Dairy Free Banana Oat Pancakes in the Aug/Sept 2016 edition of Canadian Cycling Magazine from women’s pro-cyclist  Leah Kirchmann from Team Giant Liv.

All that’s need to make these healthy delicious pancakes Gluten Free is to use Gluten Free Oats along with a handful of other ingredients and before you know it you have something to fuel you for the day.

I top mine with my favorite fresh seasonal fruit or during the winter months I use a frozen berry mix that I warm up in the microwave, and a small amount of real maple syrup.

1 Banana
1/2 cup Soy or Almond milk
1/2 cup Gluten Free Oats
1 egg
1/2 tsp cinnamon
1/4 tsp salt

Place all of the ingredients in a blender and whirl away until mixed and then allow to sit for several minutes for the batter to thicken before making.

This recipe will make 4 pancakes and can serve 2 depending if you feel like sharing.
